Instructions

Preheat oven to 350F. Lightly brush a 8" x 4" baking dish with oil, line with parchment paper in both directions and set aside.

Melt the coconut oil and put into a large mixing bowl.

Add the coconut sugar, eggs, and vanilla and blend with a mixer or hand blender until light and fluffy.

Add dry ingredients to the wet mixture and stir just until combined and no dry spots remain..

Add in chocolate chips & pecans.

Pour the batter into a prepared baking dish and bake at 350 for ~25 min, until middle is set and a toothpick inserted into the center comes out clean.

Cool in the pan on a cooling rack, cut, enjoy!
